- 4 boneless chicken breasts
- 1 cup long-grain rice
- 1 can cream of chicken soup
- 1 cup chicken broth
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 cup frozen mixed vegetables
- Salt and pepper to taste
- Olive oil
- Fresh parsley for garnish
Instructions
- Heat about 2 tablespoons of olive oil in a large skillet over medium heat. Season the chicken breasts with salt and pepper, then place them in the skillet. Brown on each side for 4-5 minutes until golden, then remove and set aside.
- Add the chopped onion and minced garlic to the skillet. Sauté until the onion is translucent, about 3-4 minutes.
- Stir in the rice and cook for 1-2 minutes to absorb the flavors.
- Pour in the cream of chicken soup and chicken broth, mixing well.
- Return the browned chicken to the skillet and add the frozen mixed vegetables on top.
- Bring to a gentle boil, then reduce the heat to low, cover, and simmer for about 25 minutes until the rice is tender and the chicken is cooked to 165°F.
- Sprinkle with fresh parsley before serving.
