  • 2 pints cherry tomatoes
  • 2 tablespoons olive oil
  • 4 garlic cloves minced
  • 1 teaspoon Italian seasoning
  • Salt and black pepper to taste
  • 1 cup uncooked orzo pasta
  • 2 cups vegetable broth
  • 1 tablespoon olive oil
  • 8 ounces feta cheese
  • ¼ cup Greek yogurt
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
  • Fresh basil leaves
  • Chopped parsley
  • Cracked black pepper
  • Parmesan cheese optional

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Place the cherry tomatoes in a baking dish. Toss with olive oil, garlic, Italian seasoning, salt, and pepper.
  3. Roast for 25 to 30 minutes until the tomatoes burst and become caramelized around the edges. The juices released during roasting will create a flavorful base for the orzo.
  4. While the tomatoes roast, heat olive oil in a large skillet over medium heat.
  5. Add the orzo and toast it for 2 to 3 minutes, stirring frequently. Toasting enhances the nutty flavor and helps prevent the pasta from becoming mushy.
  6. Pour in the vegetable broth and bring to a gentle simmer. Cook for about 8 to 10 minutes, stirring occasionally, until the orzo is tender and most of the liquid is absorbed.
  7. Transfer the roasted tomatoes and all of their juices into the skillet with the cooked orzo.
  8. Stir gently to combine. The tomato juices will coat the pasta and create a naturally creamy sauce.
  9. Taste and adjust the seasoning with additional salt and pepper if needed.
  10. There are two excellent ways to serve this dish.
  11. You can stir part of the whipped feta directly into the warm orzo for a creamy consistency throughout.
  12. Alternatively, spread the whipped feta onto a serving platter and spoon the roasted tomato orzo over the top for a beautiful presentation.
  13. Finish with fresh basil, parsley, and cracked black pepper.
