- 1 can (15 ounces) black beans, rinsed and drained
- ½ cup mayonnaise
- 4 ounces cream cheese, softened
- 1 cup mild cheddar cheese, shredded
- 1 cup mozzarella cheese, shredded
- ½ cup parmesan cheese, grated
- 1 large jalapeño, seeded and finely diced
- 8 slices thick-cut bacon, cooked and crumbled
- 1 medium red onion, finely diced
- ½ teaspoon kosher salt
- ¼ teaspoon black pepper
- Green onion, chopped for garnish
Instructions
- In a large mixing bowl, combine the drained corn, black beans, mayonnaise, softened cream cheese, cheddar cheese, mozzarella cheese, parmesan cheese, jalapeño, bacon, red onion, salt, and pepper.
- Stir until all ingredients are evenly combined and creamy.
- Transfer to a serving bowl.
- Garnish with chopped green onions.
