This creamy Cowboy Corn Dip is the ultimate crowd-pleasing appetizer made with sweet corn, black beans, crispy bacon, three kinds of cheese, and a hint of jalapeño heat. Ready in just minutes with no cooking required beyond the bacon, it’s perfect for game day, potlucks, BBQs, holiday parties, and family gatherings.

Ingredients

Scale
  • 2 cans (15.25 ounces each) whole kernel corn, drained
  • 1 can (15 ounces) black beans, rinsed and drained
  • ½ cup mayonnaise
  • 4 ounces cream cheese, softened
  • 1 cup mild cheddar cheese, shredded
  • 1 cup mozzarella cheese, shredded
  • ½ cup parmesan cheese, grated
  • 1 large jalapeño, seeded and finely diced
  • 8 slices thick-cut bacon, cooked and crumbled
  • 1 medium red onion, finely diced
  • ½ teaspoon kosher salt
  • ¼ teaspoon black pepper
  • Green onion, chopped for garnish

Instructions

  1. In a large mixing bowl, combine the drained corn, black beans, mayonnaise, softened cream cheese, cheddar cheese, mozzarella cheese, parmesan cheese, jalapeño, bacon, red onion, salt, and pepper.
  2. Stir until all ingredients are evenly combined and creamy.
  3. Transfer to a serving bowl.
  4. Garnish with chopped green onions.
  5. Serve immediately with tortilla chips, crackers, or fresh vegetables.

Notes

For the best flavor, refrigerate the dip for 30 minutes before serving.
Drain the corn thoroughly to prevent excess liquid.
Adjust the heat level by adding more or less jalapeño.
Make ahead up to 24 hours and store covered in the refrigerator.
