  • 1 pound ground turkey (85% lean, 15% fat)
  • ¼ cup finely chopped Italian parsley
  • 1 tablespoon finely chopped fresh dill
  • ½ teaspoon dried oregano
  • 2 tablespoons very finely diced red onion
  • 2 cloves garlic, minced
  • ¼ cup crumbled feta cheese
  • ½ teaspoon kosher salt
  • ¼ teaspoon freshly ground black pepper
  • 1 tablespoon olive oil (for cooking)
  • 4 burger buns (sesame seed or brioche)
  • ½ cup tzatziki sauce
  • ¼ cup crumbled feta cheese
  • 1 tomato, sliced
  • ½ cucumber, sliced
  • ¼ red onion, sliced
  • 4 lettuce leaves

Instructions

  1. Prepare the tzatziki sauce and refrigerate until ready to use. Homemade or store-bought both work well.
  2. In a large mixing bowl, combine the ground turkey, parsley, dill, oregano, red onion, garlic, feta cheese, salt, and pepper.
  3. Mix gently with your hands until just combined. Avoid overmixing to keep the burgers tender.
  4. Divide the mixture into 4 equal portions and shape into patties about ½-inch thick.
  5. Press a small indentation into the center of each patty to help them cook evenly.
  6. Heat olive oil in a large skillet over medium heat.
  7. Cook the patties for 4–5 minutes per side, or until the internal temperature reaches 165°F.
  8. Do not press down on the burgers while cooking, as this can cause them to lose moisture.
  9. Assemble the burgers by layering lettuce, turkey patties, tzatziki sauce, feta, tomatoes, cucumbers, and onions on toasted buns.
  10. Serve immediately and enjoy.

Notes

Use 85% lean ground turkey for the juiciest burgers.
Make the tzatziki up to 2 days ahead for easy meal prep.
Create an indentation in the center of each patty to prevent puffing.
Toast the buns for added texture and flavor.
Leftover patties can be refrigerated for up to 4 days or frozen for up to 3 months.
